Vanilla Good Luck Cupcakes

I am going to do a big follow-up on my Giant Cupcakes this weekend as I am making one for an order, so I will hand down all the tips with my second official run next week!

Last week was a busy one for the business – I had one major corporate order and then a small donation order for a friend of my Mum’s who was leaving the child care centre where my siblings attend. We decided to make ‘Good Luck’ Cupcakes, with my new red fondant (beats hand colouring!) and some letter cutters.

Good Luck Cupcakes

These cupcakes are simply vanilla cake base with white rolled fondant and then red fondant star shapes and letters. A very simple but very cute way of getting a message across :)

I’d like to present an improved Vanilla recipe, which is based off of the very tasty Chocolate one, which is a very spongy moist cupcake.

Vanilla Cupcakes

  • 1 cup SR Flour
  • 1/3 cup Plain Flour
  • 1 tsp Vanilla Essence
  • 110-120g butter (it depends on how moist you like them)
  • 2 eggs
  • 1/2  -  3/4 cup milk (depending on batter)
  • 2/3 cup caster sugar

Method:

  1. Line cupcake trays. Preheat oven to 170C (160 fan-forced). Beat softened butter, add sugar and vanilla essence.
  2. Add eggs one at a time, beating until just combined.
  3. Add half of the flour (sifted) with 1/4 cup of milk, and repeat for the remaining half. If the batter is too thick, add some more milk.
  4. Spoon into cases and bake for 15-20 minutes or until a skewer comes out just clean. Check at 15 minutes!

    Hey! Love your recipes! They taste divine!!!
    I have tried everything though…. your ‘good luck vanilla’ and ‘double chocolate cupcake’ keep coming away from my cupcake liners! I make sure they are definetly not left in oven too long… have tried taking them out of pans to go on racks straight away and also leaving them in tins 5 mins to cool 1st, have tried taking out a bit of the butter…. what else can I do??
    The cupcake liners I have used have never done this before with any other recipes so I do not know what to do and am desperate as I am supposed to be making a very large amount of these for a friends wedding in 2 weeks and yours are the best ones I have tasted!!! PLEASE HELP!!!!

    Hi! In the very first second that I saw these cupcakes, I thought they were sushi! Just thought you might like the idea of “sushi” cupcakes – they’d be kind of cute, hey!?
    Your cupcakes all look fantastic – I wish mine looked like that!

    hi monnie!
    Great website and great looking cakes!
    ive been making cupcakes for years now.. but, mine never look like these. yours are soo perfectly shaped and the top looks perfectly smooth too. i have always have to over ice mine to cover the uneven-ness.. and mine always end up lookign like muffins too.
    what sort of cupcake liners and pan do you use because im obviously not using the right ones :(
    AND can i please have your ‘miracle chocolate cake’ recipe.. :) :)
    pleaseeeee help!!
